Choosing the right language pair, variety and script
In short
A translation request is incomplete without the variety and the script: Simplified or Traditional Chinese; Castilian or Latin American Spanish; Brazilian or European Portuguese; Modern Standard Arabic or a regional variety. The receiving authority decides, not the client's preference.
Getting this wrong is not a stylistic issue — a mainland Chinese authority expecting Simplified characters will refuse a Traditional text, and the work has to be redone from the start.
Personal names need their own decision. The passport spelling governs for official documents, even where a different transliteration is more phonetically accurate, because every downstream record will be matched against the travel document.

- Any prior translation whose terminology should be followed
Watch out
Mixing scripts or transliteration styles across a document set breaks the match between documents at the counter.
